These are some of the healthy recipes that my coaching offers!
Baked Zoodles:
2 servings of zucchini noodles,
1/4 cup approved tomato sauce
4 oz low fat/part-skim ricotta
2 oz shredded low fat mozzarella
1/2 tsp black pepper
1/2 tsp garlic powder
1 TBS Parmesan (on top or mixed into dish as you prepare
I cook zoodles and then put them in a pan to crisp/remove water.
Mix cheeses, sauce and condiments, then stir in zoodles and bake. I keep some of the mozzarella and sauce on the side so I can put it on top... then can add remaining mozzarella on top and baked it.
So delicious 1 serving = 1 full lean and green
